More Yummy Hawaii Food!


This was at Jackie Rey's Ohana Grill. This one was the Korean Style Short Ribs with Tempura Vegetables. It was super good.
Elbert had the Lemon Herb Chicken with brown rice and vegetables. He loved it.

Huli Huli Chicken

We are in Kailua-Kona, Hawaii this week and next. Last night was our 4th anniversary. The tables were situated perfectly to see the sunset. We ate at 5:30, so we were front and center for the sunset, which was amazing. We ate at Don the Beachcomber Restaurant located in the Royal Kona Resort, which we happen to be staying at.
I ordered the Island Huli Huli Chicken(above)-Tender half chicken marinated with lemons, limes, oranges, shoyu, and anchiote seasoning then rotisserie roasted to perfection, comes with guava glaze and white truffle honey and coconut rice. Seriously, this was the best chicken ever. I usually don't like chicken with bones or skin, but I actually ate the skin and was happy to cut around the bones to get this chicken. SOOOOO GOOOOOOD!
Elbert ordered the Pi Yi'd Baby Backs-Pork ribs coated with our own house made rub, flame broiled and baked with Don's own honey-rum-mango-pineapple BBQ glaze. It came with pineapple coleslaw. The coleslaw was awesome. Elbert said that the ribs weren't as good as my Dad's, but that is pretty hard to do!

Peach and Raspberry Crisp

This is my very first recipe to post. Yeah. I chose an Ina Garten recipe because I love her recipes. This recipe is in the original Barefoot Contessa Cookbook. Let me say that if you don't own this cookbook, go to amazon.com right now and order it. It's pricey, but worth it, so worth it. I have made so many of her recipes and swear by them. Elbert's b-day was last week, so on Sunday we had a big family dinner at my Parent's house. My dad made ribs and I made baked beans and Barefoot Contessa french potato salad. For dessert, I decided to make a peach crisp. I made the Barefoot Contessa recipe for Peach and Raspberry Crisp, but without the raspberries. It was so yummy. The peaches are a little bit orangy from the zest. The topping is great because of the oatmeal. This is another Barefoot Contessa recipe that I will make over and over. Julie and Julia

So, I'm sure that I'm the eight thousandth person to start a food blog after seeing Julie and Julia. As soon as the movie was over, Elbert looked over at me and said "you should do a food blog...You could totally do that". I appreciated his confidence in me, but at first I thought "why would someone want to read about my cooking? It's not very exciting". The more that I thought about it and the more Elbert encouraged me, I thought I could do it and it might even be fun. I have had a family blog for about a year and it has been fun, but it's more about my daughter than about me. SO...after being inspired by this movie and encouraged by my husband, I will try to have my own food blog.
That said...I love to cook! I have always enjoyed it. I wouldn't say that I am an excellent cook, but I don't get many complaints. I love watching The Food Network. I own all of Ina Garten's Barefoot Contessa cookbooks and I love all of them. I bought the first one right after it came out. Ina Garten used to have a column in Martha Stewart Living before she did her first cookbook. I read that too. I own her DVD series and DVR her show on the food network. I am a little bit obsessed. But her food is so good.
So, I will do my best to share my love of food and cooking with anyone who wants to read it. Enjoy!
